Baked Paddy Straw Mushroom in Banana Leaf (Chatu Patra Poda)
Inakshi MohantyIngredients
- 100 g Fresh Trove dehydrated paddy straw mushrooms
- 2-3 large banana leaves
- 2 tablespoons mustard paste
- 2 tablespoons grated coconut
- 1 tablespoon poppy seeds paste
- 2-3 green chilies finely chopped
- 1 medium onion finely chopped
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 2 tablespoons mustard oil
- Salt to taste
Instructions
Rehydrate Mushrooms:
- Rehydrate Fresh Trove paddy straw mushrooms by submerging them in a bowl of water for 3-4 hours. Once rehydrated, drain the water and chop the mushrooms into small pieces.
Prepare the Mixture:
- In a mixing bowl, combine the rehydrated and chopped mushrooms, mustard paste, grated coconut, poppy seeds paste, chopped green chilies, chopped onion, turmeric powder, cumin powder, coriander powder, and salt. Mix well until all the ingredients are evenly combined.
Prepare the Banana Leaves:
- Wash the banana leaves thoroughly and cut them into rectangular pieces large enough to wrap the mushroom mixture. Slightly wilt the banana leaves by holding them over a flame or steaming them to make them pliable.
Wrap the Mixture:
- Place a portion of the mushroom mixture in the center of each banana leaf piece. Drizzle a little mustard oil over the mixture. Fold the banana leaves to form packets and secure them with kitchen twine or toothpicks.
Cook on Gas Stove:
- Heat a tawa (flat griddle) on medium heat. Place the banana leaf packets on the tawa. Cover them with a lid to trap the steam.
- Cook for about 10-12 minutes on each side, or until the banana leaves are charred and the mushrooms are cooked through. Turn the packets occasionally to ensure even cooking.
Serve:
- Carefully open the banana leaf packets and serve the Pala Chatu Patra Poda hot, garnished with fresh coriander leaves. Enjoy this traditional Odia delicacy with steamed rice or as a standalone snack.
