Ingredients
  

  • Fresh Trove Dried Paddy Straw Mushrooms: 50 grams Equivalent to 500gms of Fresh Mushroom
  • Potatoes: 2 medium-sized peeled and thinly sliced (optional, for added texture and flavor).
  • Turmeric Powder: 1/2 teaspoon.
  • Red Chili Powder: 1/2 teaspoon adjust according to spice preference.
  • Salt: To taste.
  • Oil: For frying.
  • Mustard Paste: 1 tablespoon ground mustard seeds mixed with water to form a paste, optional, for additional flavor.
  • Fresh Coriander Leaves: For garnish optional

Instructions
 

Prepare the Fresh Trove Mushrooms and Potatoes:

  • To rehydrate Fresh Trove paddy straw mushrooms, submerge them in a bowl of water for 3-4 hours. Once rehydrated, drain any excess water and pat them dry with a paper towel. If using fresh mushrooms, ensure they are clean and slice them thinly.
  • Peel and thinly slice one medium-sized potato.

Prepare the Mustard Paste:

  • In a small bowl, mix 1 tablespoon of ground mustard seeds with a little water to form a thick paste. Set aside.

Season the Mushrooms and Potatoes:

  • In a mixing bowl, toss the sliced mushrooms and potatoes with 1/2 teaspoon of turmeric powder, 1/2 teaspoon of red chili powder, the prepared mustard paste, and salt to taste. Ensure both mushrooms and potatoes are evenly coated with the seasoning.

Heat the Pan:

  • Place a non-stick frying pan or skillet over low to medium heat. Let the pan heat up for a minute or two.

Add Mushrooms and Potatoes to the Pan:

  • Once the pan is heated, add the seasoned mushrooms and potatoes to the pan in a single layer. Avoid overcrowding the pan to ensure even cooking.

Cook the Mushrooms and Potatoes:

  • Let the mushrooms and potatoes cook undisturbed for about 5-7 minutes on one side, allowing them to brown and crisp up. Use a spatula to gently flip them over halfway through the cooking process.

Continue Cooking:

  • Cook the mushrooms and potatoes for an additional 5-7 minutes on the other side, or until they are golden brown and crispy. Adjust the heat as needed to prevent burning.

Remove from Pan:

  • Once the mushrooms and potatoes are cooked to your desired level of crispiness, remove them from the pan and transfer them to a plate lined with paper towels to absorb any excess oil.

Serve Hot:

  • Garnish the Paddy Straw Mushroom Bhaja with Fresh Trove mushrooms and potatoes with fresh coriander leaves if desired, and serve hot as a crunchy and flavorful appetizer or side dish.
